Blue Elderflower Sparkle

This is a real quickie – great for a sundowner. I got something similar as a gift once, but have followed my own pleasure and I have to say, the results are luscious!
Serve while they’re still dancing up and down, enveloped in bubbles.


Ingredients

·       1 bottle of dry white sparkling wine
If you want to be snooty, you can of course use Pongratz or the likes, but as it’s being mixed, 
it’s a bit of a waste.
·       1 container fresh blueberries, washed
·       Elderflower Cordial
This may not be quite so easy to find. I’ve only seen it at Spar (the nice, Superspar type ones, not Quickspar). Bottle stores may also have it though. You could also replace the elderflower with other natural cordials, such as lemongrass, ginger, etc.
·       Classy swizzle sticks (optional)

Method

Set out your campaign flutes and pour about a tablespoon (or one and a half if you like it sweet) of elderflower cordial into each. Top up with sparkling wine, give it a swizzle and plonk in few (5-8) blueberries.
